Almost every Saturday I pick up a basket of produce – half fruit and half vegetable – from a co-op. I bring it home and make a list of what produce I have already in my house a list of what I received that day. Then I make my menu based off these items. This helps me eat healthier AND save money. Then I share my planned menu with you. Although this week it’s Monday because of the housewarming party we had on Saturday.

Saturday: We had our Housewarming party with lots and lots of food… so no actual dinner plan:
Sunday: Chicken fingers, green salad & leftover Sweet Potato/Coconut Thai Curried Soup
For the rest of the week:
– Loaded Baked Potato Soup
– Butternut Squash Risotto with an egg dish of some type
– Thanksgiving Dinner
